How fast does my NAS need to be in order to stream video?

It depends on what you're trying to stream. Ripped, uncompressed standard definition DVD VOB files can have average bit rates of 1-1.5 MB/s, which most NASes can support. High definition streams can have peak rates as high as 2.5 MB/s, which again, most NASes should handle.
